Premium Sencha comes only from select quality tea leaves, which are picked in the early spring. The fresh leaves are immediately deep steamed and processed, resulting in a thick-rich, slightly-sweet taste and a dark green color. Choose premium sencha when only the best Sencha will suffice.
During processing, deep steamed tea is steamed approximately one minute longer than regular Japanese green tea. This sounds like a simple procedure, but actually, it takes great skill and knowledge, such that most tea companies in Japan are unable to do it. Deep steaming causes tea leaves to lose their "leaf" shape and become separated. That makes this tea appear more powdery than others. When brewed, it also results in a thick-rich and dark green liquid with notes of umami. Available in a 1.5 oz. resealable bag.
