Penelope Barker organized the famous Edenton tea party on October 25, 1774. She convinced 50 women to sign their names to a petition to stop drinking tea and buying English cloth. The petition shocked the British and London magazines labeled the Edenton women “uncontrollable.”  Although there was no dumping of tea into Edenton Bay, the petition was nothing less than a bold display of patriotism and love of liberty. This rebellious event took place less than a year following the more famous Boston Tea Party.

Hot Tea Brewing Recommendations:
AMOUNT TO USE: Put 1 slightly heaping teaspoon of loose tea for each 7-9 oz/200-260 ml of water in the teapot. Pour
170ºF water over tea. DO NOT POUR BOILING WATER OVER GREEN TEA!
BREWING RECOMMENDATIONS: Steep 3-7 minutes. Milk & sugar are not recommended.
IDEAL BREWING TEMPERATURE: 77ºC/170ºF. Minimum Brewing Temperature: 74ºC/165ºF.


Iced Tea Preparation Recommendations:
AMOUNT TO USE: To make 1 L/1 QT, put 12 slightly heaping teaspoons of loose tea into a teapot. Pour 1¼ cups/315ml of
170ºF water over tea. DO NOT POUR BOILING WATER OVER GREEN TEA!
BREWING RECOMMENDATIONS: Steep 3-7 minutes. Fill a serving pitcher 1/4 full with cold water. Pour tea into serving pitcher straining the tea. Add ice, top-up with cold water, garnish and sweeten to taste.
IDEAL BREWING TEMPERATURE:
77ºC/170ºF. Minimum Brewing Temperature: 74ºC/165ºF.
