The three ships raided in Boston Harbor on December 16, 1773, contained 340 chests of Chinese teas, including 60 half-chests of Singlo green tea.

Singlo originated in the Singlo (Sung-lo) Mountains of Anhui Province. Singlo was a superior grade of tea, which the East India Company needed to move out of their London warehouses before it spoiled.

It's a shame that this tea was thrown to the fishes. It would have been one of the best cups of tea ever to pass a colonist's lips - if they didn't put boiling water on it!

This tea is also available in Boston Tea Party Ships & Museum keepsake tins.

Steep like a tea professional, and never use boiling water on green tea. 165-175F is optimal.
